Ingredients:
  • 2 cups leftover roasted chicken, shredded or sliced
  • 4 slices of sourdough bread
  • 4 slices of cheddar cheese
  • 4 slices of American cheese
  • 2 tablespoons butter, softened

Optional add-ins:

  • Sliced tomatoes
  • Sliced avocado
  • Bacon slices

Directions:

  1. Preheat a skillet or griddle over medium heat.
  2. Butter one side of each slice of sourdough bread.
  3. Place two slices of bread, buttered side down, on a clean surface. Layer one slice of cheddar cheese, a portion of leftover chicken, and one slice of American cheese on each slice of bread. If desired, add any optional add-ins, such as sliced tomatoes, avocado, or bacon.
  4. Top each sandwich with the remaining slices of sourdough bread, buttered side up.
  5. Place the sandwiches in the preheated skillet or griddle. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted, gooey, and slightly melted.
  6. Once the sandwiches are cooked, remove them from the heat and let them cool for a minute or two. This will help the cheese set a bit and make it easier to slice.
  7. Slice the sandwiches in half diagonally and serve hot.
The combination of cheddar and American cheese in this leftover chicken grilled cheese creates a perfect balance of flavor and gooeyness. The sourdough bread adds a delicious tang, while the leftover roasted chicken adds a savory and satisfying element. Feel free to customize the sandwich with your favorite add-ins for extra flavor and texture. Enjoy your cheesy delight!
