- 2 cups leftover roasted chicken, shredded or sliced
- 4 slices of sourdough bread
- 4 slices of cheddar cheese
- 4 slices of American cheese
- 2 tablespoons butter, softened
Optional add-ins:
- Sliced tomatoes
- Sliced avocado
- Bacon slices
Directions:
- Preheat a skillet or griddle over medium heat.
- Butter one side of each slice of sourdough bread.
- Place two slices of bread, buttered side down, on a clean surface. Layer one slice of cheddar cheese, a portion of leftover chicken, and one slice of American cheese on each slice of bread. If desired, add any optional add-ins, such as sliced tomatoes, avocado, or bacon.
- Top each sandwich with the remaining slices of sourdough bread, buttered side up.
- Place the sandwiches in the preheated skillet or griddle. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted, gooey, and slightly melted.
- Once the sandwiches are cooked, remove them from the heat and let them cool for a minute or two. This will help the cheese set a bit and make it easier to slice.
- Slice the sandwiches in half diagonally and serve hot.
