- 1/4 cup toasted walnuts
- 1 radish, shaved
- 1/2 Persian cucumber, shaved

For the Meyer Lemon Vinaigrette:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed Meyer lemon juice
- 1/2 teaspoon honey
- Salt and pepper, to taste
- 1 tablespoon chopped dill
- 1 tablespoon chopped Italian parsley
Directions:
- In a large salad bowl, combine the chopped Little Gem lettuce, toasted walnuts, shaved radish, and shaved Persian cucumber.
- In a small bowl, whisk together the extra-virgin olive oil, Meyer lemon juice, honey, salt, pepper, chopped dill, and chopped Italian parsley to make the Meyer Lemon Vinaigrette.
- Pour the vinaigrette over the salad ingredients and toss gently to coat everything evenly.
- Transfer the dressed salad to a serving plate.
- Top the salad with the sliced cooked Pasture Project Smokey Red chicken breast.
- Grate ricotta salata cheese over the top of the salad.
