Italian Chopped Salad with Spicy Bomba Breast

Ingredients

  • 1 package Pasture Project Spicy Bomba chicken breasts, cooked according to the package instructions and chopped
  • 4 heads gem lettuce, chopped
  • 1 head Treviso or radicchio, chopped
  • 2 cups arugula
  • ½ cup pepperoncini, chopped
  • 1 cup jarred chickpea, drained
  • ½ cup Castelvetrano olive, pitted, chopped
  • 1 cup pecorino cheese, ¼” cube
  • 1 basket baby tomato
  • ½ cup red wine vinegar
  • ½ cup extra virgin olive oil
  • 3 tablespoons water
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt

Cooking steps

  1. In a mason jar, combine olive oil, red wine vinegar, mustard, oregano, water, and salt. Close the mason jar tightly and shake vigorously until well combined.
  2. In a large mixing bowl, mix all ingredients with enough dressing to coat everything well.
  3. Plate the salad on a large platter and enjoy!
