Ingredients
- 1 package Pasture Project Spicy Bomba chicken breasts, cooked according to the package instructions and chopped
- 4 heads gem lettuce, chopped
- 1 head Treviso or radicchio, chopped
- 2 cups arugula
- ½ cup pepperoncini, chopped
- 1 cup jarred chickpea, drained
- ½ cup Castelvetrano olive, pitted, chopped
- 1 cup pecorino cheese, ¼” cube
- 1 basket baby tomato
- ½ cup red wine vinegar
- ½ cup extra virgin olive oil
- 3 tablespoons water
- 1 tablespoon Dijon mustard
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
Cooking steps
- In a mason jar, combine olive oil, red wine vinegar, mustard, oregano, water, and salt. Close the mason jar tightly and shake vigorously until well combined.
- In a large mixing bowl, mix all ingredients with enough dressing to coat everything well.
- Plate the salad on a large platter and enjoy!
