Ingredients:
For the sandwich:
- 2 Pasture Project Spicy Bomba chicken breasts
- 2 Martin's potato rolls (or any soft burger buns)
- 4 slices of pepper jack cheese
- Butter, softened
- Mayonnaise
- Store-bought coleslaw from the deli counter
- Bread and butter pickles
- Kettle chips
Directions:
- Preheat the grill to medium-high heat.
- Place the Pasture Project Spicy Bomba chicken breasts on the grill. Cook for about 6-8 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Split the Martin's potato rolls and lightly butter the cut sides. Heat a skillet over medium heat and place the rolls, cut side down, in the skillet. Toast the rolls until golden brown.
- Remove the toasted rolls from the skillet. Place a slice of pepper jack cheese on each cut side of the rolls.
- Preheat the broiler in your oven.
- Place the rolls with the cheese on a baking sheet and broil them for a few minutes until the cheese is melted and bubbly.
- Remove the rolls from the broiler and spread mayonnaise on each toasted side of the rolls.
- Place a sliced Spicy Bomba chicken breast on the bottom half of each roll.
- Top the chicken with a scoop of store-bought coleslaw and a few bread and butter pickles.
- Add a handful of kettle chips on top of the pickles, and then place the top half of the roll on the sandwich.
- Serve the Spicy Bomba Marinated Chicken Breast Sandwich immediately and enjoy!
