Spicy Bomba Chicken Breast on Challah Bun with Coleslaw and Yuzu Mayonnaise, created by guest Chef: challahdad, the "Father of the Bread"

  • 1 pack spicy bomba breast
  • 1/2 cup mayonnaise
  • 1 tbsp yuzu juice
  • 1 tsp soy sauce
  • 1/2 tsp honey
  • 1/2 tsp sesame oil
  • 1 pint deli counter coleslaw (or make your own)
  • 4 mini challahdad challah buns (or store-bought if you can't order from him in LA!)
  • 1/4 cup thinly sliced jalapeños (pickled or fresh)
  • Butter (for toasting buns)

1. Prepare the Yuzu Mayonnaise:

    • In a small bowl, mix mayonnaise, yuzu juice, soy sauce, honey, and sesame oil until well combined.
    • Cover and refrigerate until ready to use.

2. Cook the Chicken:

    • Preheat a grill or grill pan over medium-high heat.
    • Grill the marinated chicken breasts for about 4-5 minutes per side, or until fully cooked and internal temperature reaches 165°F.
    • Let the chicken rest for a few minutes before slicing.

3. Assemble the Sandwich:

    • Butter the mini challah buns and toast them lightly in a pan until golden brown.
    • Spread a generous amount of yuzu mayonnaise on both sides of each bun.
    • Place a sliced grilled chicken breast on top.
    • Add a generous serving of coleslaw over the chicken.
    • Sprinkle thinly sliced jalapeños over the coleslaw.
    • Cover with the top half of the bun.
