Spicy Bomba Chicken Breast on Challah Bun with Coleslaw and Yuzu Mayonnaise, created by guest Chef: challahdad, the "Father of the Bread"
Ingredients:
- 1 pack spicy bomba breast
- 1/2 cup mayonnaise
- 1 tbsp yuzu juice
- 1 tsp soy sauce
- 1/2 tsp honey
- 1/2 tsp sesame oil
- 1 pint deli counter coleslaw (or make your own)
- 4 mini challahdad challah buns (or store-bought if you can't order from him in LA!)
- 1/4 cup thinly sliced jalapeños (pickled or fresh)
- Butter (for toasting buns)
Instructions:
1. Prepare the Yuzu Mayonnaise:
- In a small bowl, mix mayonnaise, yuzu juice, soy sauce, honey, and sesame oil until well combined.
- Cover and refrigerate until ready to use.
2. Cook the Chicken:
- Preheat a grill or grill pan over medium-high heat.
- Grill the marinated chicken breasts for about 4-5 minutes per side, or until fully cooked and internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before slicing.
3. Assemble the Sandwich:
- Butter the mini challah buns and toast them lightly in a pan until golden brown.
- Spread a generous amount of yuzu mayonnaise on both sides of each bun.
- Place a sliced grilled chicken breast on top.
- Add a generous serving of coleslaw over the chicken.
- Sprinkle thinly sliced jalapeños over the coleslaw.
- Cover with the top half of the bun.
